Interko Accelerates Ripening Digitalisation

Data-driven control and soon predictive technology further differentiate the market leader’s fruit ripening rooms.

Interko Accelerates Ripening Digitalisation

Interko, the global leader for the design, manufacture, and installation of state-of-the-art fresh fruit ripening rooms, is pushing ahead with digital transformation by integrating advanced data processing and soon artificial intelligence (AI) across its next-generation ripening solutions.

The bold move is reshaping global fruit ripening; giving operators greater control, better decision-making, and systematic performance improvement as they prepare for an AI-assisted future. Above all, the ability to proactively manage the ripening process is delivering enhanced precision, adaptability, and cost efficiency.

Digital transformation represents the latest innovative step in the Dutch company’s development of smart technologies, enabling fruit ripeners to better adapt to a rapidly changing world market.

Chris Maat, Managing Director/Partner at Interko, explains: “Ripening has become a data-driven, digitally-managed process rather than a traditional experience-based craft. Through digitalisation, our customers can optimise fruit quality, achieve specific ripeness levels, reduce energy costs, and gain the crucial insights needed to operate more precisely and proactively – using data to go well beyond daily room management.”

Smarter Data For Smarter Ripening

Thanks to a new digital data network, Interko’s RipePilot control system can now collect and process larger and more complex datasets, consistently. This is providing an increasingly accurate picture of the ripening process, thereby expanding the understanding and capabilities of operators.

By interpreting information from multiple sensors measuring temperature, carbon dioxide, ethylene, and humidity, RipePilot gives ripeners greater precision, increased flexibility, and more data-driven control than ever before. The advanced data processing is driving continuous improvements in fruit ripening, and closer alignment with diverse customer expectations.

Maat notes: “Buyers expect specific ripeness profiles across different fruit categories according to whether the end market is fresh, processed, or frozen. RipePilot allows operators to apply fruit-specific programmes for bananas, avocados, and mangoes, and the system’s data-led approach ensures that every batch reaches the desired ripeness, even when the starting conditions of the fruit vary significantly.

“RipePilot has evolved into a digital intelligence platform that connects sensors, algorithms, and performance data to transform ripening operations worldwide. It enables operators to automate quality monitoring, track performance, and generate exportable reports for analysis, and this is becoming central to modern ripening operations.”

Rising Role Of AI Assistance

Going forward, Interko expects AI to play an increasingly central role in supporting the global fruit ripening industry. By analysing datasets from large numbers of rooms, intelligent algorithms will increasingly aid decisions such as ethylene injection timing, predicting condition changes, and optimising ripening cycles in real time.

Maat comments: “AI-assisted ripening combines human expertise with machine precision. It’s an intermediate step toward fully automated ripening, supporting more proactive and predictable management of fruit quality.”

To power its AI-assisted ripening strategy, Interko is developing intelligent algorithms that will help global operators to move from reactive control to predictive, real-time decision-making and increasing automation.

Maat reveals: “By combining smart hardware, connected data, and intelligent algorithms, we’re shaping the future of fruit ripening. Our technology is designed to empower customers to achieve more consistent results, reduce waste, and adapt faster to market demands.”

Future product development at Interko will focus strongly on digital innovation, including a next-generation ripening room cooler launching soon that lays the foundation for further AI-driven functionality and digital process control.
